Dairy science under the spotlight at Dairy Olympics

Diary science will be under discussion next month as Melbourne hosts the first International Dairy Federation (IDF) Symposia in Australia.

Sponsored by Dairy Australia, the Symposia will bring experts together to examine developments in dairy science.

Two symposia are due to take place, including the:

  • Second IDF Symposium on Microstructure of Dairy Products, 3rd-4th March
  • Fifth IDF Symposium on Science and Technology of Fermented Milk 6th-7th March

Considered the ‘Olympics’ of diary science, the conference will host more than 150 delegates from over 15 countries.

“The IDF Symposia are the most prestigious conferences on the science of dairy in the world,” said Neil Van Buuren, Program Manager at Dairy Australia and Chairperson of the Symposia coordinating committee.

Guest speakers are lined up for the symposia with numerous topics of discussion. Attendees will hear from speakers including Dr Jeremy Hill, Chief Technology Officer for Fonterra and President and Chair of the Board of the International Dairy Federation.

Australian diary will be the focus, and topics like the ‘Microstructure of Australian Cheddar Cheese’ are on the agenda. The spotlight will be cast on the impact of certain variables like temperature and calcium concentration on production.

Other papers and presenters will examine fermented milk and issues such as the science, manufacture and health-benefits of fermented dairy products.

Van Buuren said farmers and processors can gain a snapshot into the state and future of contemporary dairy science.
